Wildtree Wednesday Recipe 

I love comfortable food. This recipe is very filling and loaded with fiber. Great vegetarian option and sure to be enjoyed by those carnivores too. 

INGREDIENTS

1 cup cooked quinoa

3 cups cooked black beans (or two

15-ounce cans, drained and rinsed low sodium)

2 large sweet potatoes, shredded

1 cup shredded cheddar cheese

2 eggs

1 cup salsa

2 tbsp fresh cilantro, chopped, for garnish

2 tablespoons of wildtree taco seasoning blend 
DIRECTIONS

1. Preheat oven to 350° F. Prepare a 9” x 9” casserole dish with nonstick cooking spray.

2. In a large bowl, mix together the quinoa, black beans, sweet potato, 1⁄2 cup of the cheese, and the taco seasoning blend.  In a small bowl, mix together the eggs and the salsa. Pour the salsa mixture over the quinoa-bean mixture, then pour everything into the prepared casserole dish.

3. Sprinkle the remaining cheese over the top and bake, uncovered, for 30 minutes. Garnish with the cilantro.
Serving size: 1 heaping cup

Secondhand curves con 

​​This weekend I was invited to be a vendor a secondhand curves convention. Started by a friend of mine Rachel Cadie who wants to help women feel beautiful and confident. She owns a plus size consignment shop and sells fashionable clothing and accessories. I often see her post selfies with different outfits to share her fashion and she always looks amazing. Never do I see her post negative post but always uplifting to help women feel beautiful and confident. This convention hit me more than I thought it  would.

I was ready to be a vendor and hoping to talk to people about my classes and products. I left with a ton of happiness from all the women enjoying being them. The keynote speaker practically making me snort with her jokes. A woman reading a chapter from her book I think so many women could relate to. Women walking in a fashion show with so much confidence and amazing outfits. I have never actually been to a fashion show so that was exciting. Women coming up and telling me their stories. 

What made this so special to be part of? It had nothing to do with being a plus size convention or even about fashion. It was real people being lifted up by those around them. Other women telling them your beautiful, your amazing and you have something special. Every speaker every model and vendor had it on their faces.

Rachel you are leading a movement and don’t stop because this is a game changer. In a world of judgment and shaming you are bringing a light for women. We need more people like you and more uplifting of each other instead of tearing down. If you haven’t checked out her store make sure to. She is located in Rockford IL and many people travel from different cities to visit her shop. 

Great job in leading a movement and I am so glad I was able to experience it.

When you don’t realize your actions build them

I am a mom of 3 boys. A 7 month old, 5 year old and a 12 year old. My world is crazy busy and I always have a new project of activity added because I can’t say no and love to try to save the world. My boys know that my work consist of traveling to different facilities to teach classes and train clients. My awesome husband brings them often to my work to visit me and sometimes if the gym is pretty empty they play on equipment. Even though I work in the fitness industry it is not always easy to get a good strength training workout in at work. I decided to get out one of my bands today and do one at home. Now to set the record straight I have worked out at home before I know you all see those fabulous mom’s of instagram with little babies making it look so easy but that really isn’t our world. Once I usually start to workout my 5 year old wants to ask for everything, the baby is eating paper and my pre-teen tries to get away with running off to his friends. Today the stars aligned for me and I got in a 30 minute back and core workout. I got out a band and started and my 5 year old brought my mat out for me, he can be a real sweetheart. Then I set my timer to do an interval style workout and he grabs my foam roller and then another band and joins me. Of course he does his own thing and it isn’t much of a workout I have ever seen before but it makes my heart beam because he just saw what I was doing and started to do something also. I feel this usually does not seem monumental at the time to us, but think about some of you habits now and how your parents influenced them. We really can make or break our kids sometimes . We really can teach our children exercise is something we do to feel good and be proud of our strengths or teach them it is a punishment because of the way we look. We can help our children build strong bones and prevent injury later in life. We can teach our children that exercise can bond a family and they can enjoy time together while staying healthy. Create those habits with your children that will help build a strong future. image

Wildtree workshop review

I am a mother of 3 boys and a fitness instructor. I love what I do but sometimes forget the nutrtion part is so important with crazy boys. I stumbled upon Wildtree when looking for natural products online and meal prepping. I have to say I am pretty boring when it comes to meal plans. I make the same things and they get boring. In an effort to help spice it up and bought the rep kit then a bundle to get the discount also:) This is my honest review of the Wildtree workshops and if you have any questions please let me know so I can help you.
My bundle came pretty fast and I didn’t expect the bottles to be so big.

I was very excited to open my packet to see what was inside. The kit comes with recipe cards, a workstation sheet since most people do a workshop I did my prep at home. Also an inventory card which was nice to have on the fridge with an overview of everything. I guess I did think that veggies or full course recipes were included but most you make your own side. They do give additional recipes which is nice though and seasonings work well on veggies.

 

You do not get a grocery list in your packet your rep you ordered from will send it. I went to aldis love that store! Spent about $80 on everything I did not buy all organic but did get quite a bit so could have been more or less. I shopped all at the same store to make easier. If you want to save more keep up on sales.
So now have my groceries, kit on kitchen table and my bags ready to prep. Remember some meat and veggies you will need to chop so have knives on hand. If going to a workshop this is done before your workshop. I did realize I need a chopper my eyes were on fire after all the onion cutting.
Your workshop station sheet has a photo of the meal what you need and instructions. It really was pretty easy. For instance one would say cut up your meat, onion add pepper then whatever wildtree products you need.
It took me about an hour to finish everything. The mixing up was a bit of a challenge with some things like the meatloaf but wanted it mixed well.

I kept some food in the fridge and put some in the freezer. There are labels to put on your bag to make easy to know what it is then general directions on it. So far my kids have had the meatloaf and we had a side of cauliflower rice. The meatloaf was great loved the flavor. I love the idea of my meat being ready and having flavor instead of plain meat/rice and veggie like most generic meal plans.

The great thing was all the leftover product. I honestly think I could make 5 more meals. In total I made 10 with the kit. I love that the products are low sodium and sugar my husband has diabetes and high blood pressure so these are important things to watch for us. So in all I feel like we will save money by having meals ready to go. We will waste less produce, I have been using my sheet on fridge to figure out what I need for the well and not just buying random things.

 

If your thinking about ordering a workshop bundle I really do suggest it for people who are busy and want a fast healthy meal option or someone who just likes to plan.

October specials 

I just recently became a Wildtree Represenative. I have come to realize life isn’t going to get any slower with 3 boys. I needed meals that are healthy and easy for my family.
